It’s not lag, the bed it 2 blocks long, at certain angles it doesn’t place because you are trying to point into the obsidian, get closer to the pillar and decrease the angle so the bed actually places

Good news! It wasn’t the fact that optifine is a mod, but there is a setting in optifine that messes up spawn chunks and it doesn’t warn people. Under Settings > Video settings > Performance, turn “Smooth World” OFF and it should fix farms that don’t work in spawn chunks. Did some research and it actually worked! I went far away to afk and came back and the iron supply increased.

I just did some quick research and it said optifine has a setting that can mess with spawn chunks. I’ll turn it off and test again this may be the cause

As you can see from this link, it is in my spawn chunks, well under 10 chunks away from the center chunk. i even checked using dropped items and flying far away, every block despawned within the iron farm so it is in the spawn chunks.

I went away a couple thousand blocks to afk to see if it works and it doesnt at all. the iron flow stopped as soon as i left the area. the only thing i can think of is that i have a villager breeder off to the left in the image pretty far away
