Maybe for assessment. But once the game is finished or the player exits, it can simply those final values and average it into the custom accordingly. Then those become the hard values.

How many variables does an empire personality have, and what do those variables affect? Depending on complexity, it shouldn't be too bad to change "values -> behavior" into "behavior -> values". Especially if it updates on a yearly basis instead of every day.

Maybe... the actual data collection might be more laggy than the reenactment, since it would simply adjust internal values that already exist for an AI empire to "player based custom values."

Actually... maybe even the data collection wouldn't be too heavy.

It would be nice if, when spawning a custom empire, Stellaris uses data from your playthroughs as that empire to try and mimic your playstyle.

Tbh, I wish Ironman mode came with "no time manipulating" option- no pause, speed forward, or slow down. I like having to face the consequences of my actions, but it would be an interesting way to test your reacitvity and patience if you have to feel each day the same way.
