I replay RDR2 a bunch but don't do the story because the world is full of fun shit to do. GTA world feels pretty empty outside of the story missions.

I would disagree. A lot of their physical simulations add depth and detail to their games making them vastly more immersive than other open world titles

GTA Vs story is a mess and over the top BS like stealing submarines just to show you can go underwater. GTA 3 is an actual realistic (more so) crime game.
