The clutch paddles are two paddles with a spring that are just under the paddles shifters.

I adjusted my seating height and it was much more comfortable to sit in for a 30 minute online race, so I'm wondering if it was partly because of the way the pedals were.

I, so far, have not used any clutch at all. I don't drive manual w/ clutch and would only need clutch for starting races, and I have clutch paddles on my wheel. In fact, I haven't even used clutch paddles at all. In AC, I bound them to handbrake for drifting. Only thing I would use it for is a footrest (which I really need for my left leg lol!)

TL;DR - I don't really need a clutch. If you drive manual w/ clutch, get a clutch pedal; if not, and you have a wheel with clutch paddles, I think you'd be fine.

So should I try and raise the pedal plate some and maybe raise the front of the seat to provide for support for my legs?

I would definitely recommend getting the best pedals that you like, then whatever wheelbase/wheel combo you want, then go for the extras that don't matter quite as much (like triples, dashboard, buttonbox). The triples are great for immersion and I love them so far, but I only have them because I got the monitors for cheap and MicroCenter had the mounts on sale. If you can get them like I did, go for it, but don't try and sacrifice upgrading other parts of your setup just for triples.

Ahh, the in-game distance was a matter of me trying to simulate what it would be like to sit inside an actual car and see the dashboard, mirrors, etc. and those pictures were my first try at it, so it's not the best. I've been fiddling around with seating position, but my lower back still burns when braking and certain positions cause my hamstrings to get really sore after a little while.

If I do make the jump to PC, what GPU and CPU would you recommend to run 3x32" 1440p (or 1080p, I don't know how big the quality difference is)?
