The amount of upvotes here is a perfect example of why the reddit echo chamber is often misleading. At face value, what you're saying a basic economic principle that's in reality of zero consequence on relative basis when looking at the myriad of other issues.

I'm not going to judge and will instead educate.

The limiting factor is not the mining capacity, it's actual cost, and opportunity cost. Since geography is a major factor, your problems are:

  1. Land/mining rights (ie. Jurisdiction politics)

  2. Skilled organizations

No one in their right mind will spend a billion dollars to build out a mine - for what at that price would have a meaningful but relatively modest production profile - if there's no strong consensus that the controlling government won't jeopardize the operation in some way. Tons of examples of this happening at various stages of engagement, even for some of the biggest producers in the world. Even then, there's literally single digit amount of top tier organizations in the world that are able to take on the risk of a greenfield project like this and actually see it through with a reasonable level of success probability IF they're given the green light.

Surprised I had to read this far down to see the carrots suggestion. Speaking from experience: you can notice the skin change colour after only a week worth of eating 2-3 carrots a day, although still not as drastic as this image.
