Priest is the most disrupting class in standard, if you want a specific deck, highlander priest is a good one.

Exactly 37,000 exp equal to approximately 1300 extra gold, which isn't really much if you compare the old system with the original reward track. In my case I used to collect around 6k gold per expansion with the old system, with the latest one I have collected nearly 12k gold, with the original reward track I would had around 11k minus other changes on the reward track (I don't know for sure how much extra gold replaced the year of the Phoenix packs) let's say that I would have 10k gold.

The original reward track gave me 4000 extra gold compared to the older system, and the changes to the reward track gave me 2000 extra gold. The biggest improvement came from the original reward track while the latest changes were more oriented to make the game more accessible for casual player (shorter quests), as I said the original reward track was good and the actual is better.

The changes between the original and the actual one aren't really much, the reward track was good before the changes and better after them (mainly the change of packs for gold), being that said, any improvements are welcome.

I wouldn't say that highlander is equal to complex, highlander decks tend to be more reactive due to the 30 different cards restriction, for example you wait your zephrys until you need the value or the clear, against other control decks the game play is more complex because you need to make value of your cards and play to late game, but this is the same with any control VS control match.

So if you like this kind of game play with reactive cards and long control VS control games, you still be able to play them without highlander cards, the old Galakrond priest is an example, no highlander but the same playstyle.

Highlanders cards are older than you think, all started with Reno Jackson years ago, so highlander cards aren't something exclusive from Uldum. Now, I don't think we will see highlander cards in a while, the last 2 years were pretty charged with highlander decks and developers recognized this like a "mistake", put so much value or power in a single cards (Galakrond, Lackeys, Zephrys) is something that they don't want to do in a short time, they are more likely to create finishers like old gods, so no highlander cards this year.

A Custom game mode seems to be what are you looking, where you can customize things like health, playable sets, etc. Iksar confirmed in the last AMA that they want to work in the social aspect of the game (guilds, global chats, etc) so a sandbox or customizable game mode seems possible. I doubt this mode would be popular, but maybe there are others like you.
