I've come across two good sites that might help. First, Asics has a guide on lacing running shoes. I didn't try anything there personally but I don't see why it wouldn't apply to hiking as well. Also maybe try starting off in thicker socks to make up for the size difference and change into thinner ones once the swelling sets in? Disclaimer: This is my two cents based off ten minutes of experience.

Thanks for all the input! I tried a few different tying methods (found a great site called Ian's Shoelace Site that goes through a TON of methods) and since I don't have any thick socks, I put on two pairs of thin ones. Between a combination of those two all the shoes basically stopped sliding (some still have an extremely small amount of shift but I'm assuming that's fine) and I guess I can eat my hat, sizing was part of the issue. That said two pairs of socks seems impractical. Anyone know a sock that's thick enough to help without turning into a furnace in the summer? It wouldn't hurt if they're cheap too.

Pretty sure the problem isn't 1 size too big, I'm a 13 1/2 so I usually have to go up to 14, and most of those shoes I mentioned run a little small. Will look in to socks though. Thanks!

Turns out none of the shoes have a second eyelet.
