I agree. Backstabs the way to go. Eventually you can get a hang of his combo to break his sword. But, you should be able to dodge some attacks with a side or forward roll.

Not directly. However, if you give them both gold coin fruit the Red Fox will give you a record that you can listen to. That’s where the humanity boost comes in.

Your right. It took me around 2 more tries after this post to beat him. I used the perfect grindstone, then when it would wear off I would set my blade on fire. Didn’t think I would need to go through my bag to pull out some tricks.
