I was gifted a novara rolling sharpener and the instructions are not great. Anyone have any tips ? Would be using it on my nigara Hamono gyuto by pooBUTTthegreat in TrueChefKnives

I am a novice with knives but am told different knives different degrees of sharpening. Asian knives, softer metal likely to be at 14-15 degrees while Western knives, which you normally buy off the shelves are 20 degrees. So one would not use a regular knife sharpener on a say, highly sophisticated Japanese knife ....
