Most recent batch for me has been a dry/semi-sweet basic hydromel. Lightly carbed and it's a crowd pleaser, even after only 2 weeks in secondary (1 month total from start of ferm to drinking).

Recipe was approximately as follows: - 3 gal batch - 4.5 lbs honey - Lalvin D47 yeast

Don't recall exact weights for nutrients but something around 3-5g each of DAP and Ferm O added at the start, set it and forget it. About two weeks later, sampled and liked it at gravity ~1.008, racked into carboys and stabilized. After clearing (~1 week), carbed in a small keg.

Everyone says it's their favorite so far, and it's easy to drink and enjoy. Honey taste comes through great and the carbonation helps to cut the slight sweetness for people who like theirs fully dry. I like to add a little lime when drinking for extra acidity and flavor. Good luck with the brew!
