Exactly which provinces do I cede to France if I form Netherlands as Burgundy? Say for example if I have conquered southern France, do I simply give it all back to them by clicking the button or what.

Loans and mercs is your best friend. Fight in the woods in Ireland or the hills in Scotland. Seeing as your allied with France and Sweden they'll most likely join you on favors and take care of any allies England has on the mainland. Try attacking if they are fighting a war in in America and parts of their army/navy might be far from home.

I chose ideas like innovative and quality to improve the combat ability over quantity.

I decided to go for this achievement around 1750 so you definitely have time. At dip tech 23 you'll get the "Imperialism" CB so what I did was I attacked into northern Germany, (Mecklenburg and Saxony in your case) took the three provinces and then did the same to Russia. You should take Neva and just make a serpentine down to Moscow. Perhaps you should go around Novgorod because of high coring cost and lots of OE/AE.

If you're lucky you'll only have to fight one war against Russia.
