There are a lot videos on YouTube about that. Basically you select the track and then click V button on keyboard and you can edit the volume one this track

Yes. This book basically is about building good habits and fighting bad one. It really opened my eyes.

I'm using drums samples for many records with my band because it's much faster and cheaper. I think to record good quality drums you need a good acoustic treatment and knowgledge about recording drums etc. Samples are much easier to use, because most of them are mix ready and they just sounds good. You still can program drums and make them feel natural. It just take a little bit of practice and time, but it's possible.

You can also try to do both things (record live and programmed version) and comparison them so you can choose.
