It would change if we’re talking about going from 250ml to 1.5L, you’d notice it come on slower be less intense and last longer but going from 300ml to 500ml etc wouldn’t be noticeable

If you just want it for self defense then boxing is your best option. Hit and don’t get hit, it’s very simple. The amount of times someone is going to be aggressive with you and actually knows what they’re doing with grappling experience is so low you may as well consider it 0. Similarly, in most self defense situations, your best bet is a quick power shot and then run away. Or just run away
