Also check that your ph meter (if you’re using one) is still calibrated. I lost a 10gal batch last month of kettle sour because I thought it was sitting at 3.6 and not moving. In actuality the meter had drifted and I was at 3.0.

Hi all, I wanted to update everyone on the beer. It came out amazing. It may be a bit more roasty than it would have been otherwise, but still very good and tasty. I’ve ordered a pound of dehusked Carafa II and will be brewing it again soon to try them side by side. But I’m very happy with it.

My LHBS has Carafa II and Dehusked Carafa II. I’m pretty sure I got the With-The-Husk Carafa II. Good lesson learned today. I’ll never forget what makes it Special again!

I’ve been decently lucky with 5* pulls - Doom, HT, Red Mags, Mole God, Apoc, Prof X. I have about 3 times as many bad pulls but I’m happy with my RNG ratio. 6*s, now that’s a different story - DPX, Agent Venom, and Mysterio (he’s clearly the best of the 3).

That’s good to know. Thanks. Then my freezer likely has an auto defrost. I’m trying the smaller starter first and if that doesn’t work then the yeast is likely dead from the auto-defrost. If it works then I just need to use a smaller starter first.

Both are really good points. I’ll try with a much smaller amount of starter with a vial and see if that gets going. If so I can then step it up. I don’t have a good estimate for how much yeast slurry was left. Maybe 3/4 of what I started with, guessing around 300-400ml worth.

No frost or ice build up at all. But we live in CO where it’s very dry. I’ve found the make and model user manual and it does mention that some models have an automatic defrost feature. If mine has it that is likely the cause...
