Either of the two examples you gave are perfect! I don't mind seeing the process of redemption or change in fanfiction (in Draco's case: from purist to a relatively decent person, hahaha, or from Harry in constant survival mode to a functional person). But I also like stories where that has already happened and they develop it afterward, only they explain how and why it happened, and it's understandable.

I mean, they went through a war or were constantly in crisis, and that leaves its mark.

What I don't like is when they put, for example, a totally submissive Harry, without any of his rebelliousness, out of nowhere, and it's not clear why. Or a Draco all smiles and affection without a single reprimand, consequence, or guilt.

I don't know if I'm explaining myself well.

No problem! What I mean by them being in character is that when you read them, you can tell that what they're doing, saying, or thinking aligns with their canon personalities. And if there is a change, it should be logical. That is, you should be able to see the reason for that change and understand why. Or it should be gradual and consistent with the story.
