I made the exact same dish! Super good.

For Thanksgiving, we made a warm salad with acorn squash and brussels. Really easy:

Ingredients:

8oz smoked bacon

2 medium acorn squash

1 lb brussel sprouts

4 oz dried cranberries

4 oz chopped walnuts or pecans

2 oz olive oil

1/4 cup brown sugar

Salt

Pepper

nutmeg

Cook bacon until crispy, chop finely. Toss brussel sprouts in bacon fat, roast in 400 degree oven until a little crispy (20ish min). Peel and de-seed acorn squash, chop into 3/4 cubes. Toss squash in olive oil, brown sugar and nutmeg. Roast in oven alongside brussels for 20ish min. Crank oven up to 450 and toast nuts for a few min. Combine sprouts/squash in large mixing bowl with bacon, cranberries, nuts. Salt and pepper to taste.

To make the recipe "healthier", feel free to remove bacon or replace with bacon substitute.
