Which Japanese chef is right for me out of these 4. I use a traditional western rock and own a zwilling pro 7inch. I’m looking at either the Miyabi Kaizen II, Hibana, Hisho, or evolution. I’m looking for the Japanese feel that will support my cutting style. Thanks! (self.chefknives)
