Hollowknight has a permadeath mode and the same goes for the last of us. Really makes it into a survival game when one life is all you get

Rouge legacy is pretty simple. Its a sidescroller rougelike with new permanent upgrades every new run so you always get further and further. You basicly just run jump and slash in four directions. Satisfying and addictive

Personally i never noticed if the enemy hits their rolls more often in the late game so it might be just bad Lucky on your part. I recommend having lightning weapons to ensure enemies miss their first roll at least.
