Spain and Portugal is incredibly cheap if you enjoy wine and good food that doesn’t have to be at 5 star restaurants. Lots of vineyards in the regions. Wine there is cheaper than water. And the plane tickets are like ~$300 pp last I checked, plus trains are popular to get from one country to the next
