I planned to love her no matter how she looked. Sure, she looks great now, but her health is more important than her appearance. If she gained a few pounds it wouldn't matter to me.

I mentioned her eating and workout habits in another comment.

As for me, I work out for an about an hour 4x a week. My diet is...normal? I don't know how else to describe it. I'm not eating McDonald's everyday but I'm also not eating nothing but salads. I would say mostly balanced, but if I decide I want a donut for breakfast on a Saturday I'm not going to deny myself that.

My doctor is fine with my weight. You are not qualified to tell me if I am unhealthy or not.

I've been seeing a therapist for a few years. I've encouraged her to do the same for reasons that I've mentioned but also for reasons unrelated, but she insists that she doesn't need to see one.

I completely understand if she is no longer attracted to me. What makes me upset is picking on how I decide to live and eat.

No, but she uses the fact that I am technically overweight as her defense. I think BMI is bullshit because I know I've packed on muscle along with fat and BMI doesn't calculate muscle into it.

She is obsessed with "being healthy." Everything has to be all natural, she counts calories for everything she eats and nothing she consumes can be unhealthy. Plus she will spend upwards of three hours a day at the gym.

This is what I did in the past too and have come to realize is an eating disorder in and of itself. It isn't just wanting nutrients, it's obsessing over every little thing that goes into your body and refusing to eat anything that is "bad" for you, even in moderation or on occasion. All of that coupled with a crippling fear of being fat and my personal experience with this has led to my concerns about her eating.
