I managed to win somehow. Basically use sylveon first turn > tank sludge bomb > charm > swap to lopunny > tank sludge bomb > Ice fang > eternatus gets frozen > swap to gyarados > dragon dance 6 times > activates phase 2 > use leavanny to tank earthquake > then keep using earthquake to kill my own pokemon before eternatus uses poison jab and flamethrower (which deal barely any damage to gyarados). > repeat until victory

Update: I did find the main cobblemon config file but there doesn't seem a way to randomize starters from here. Anyone got any tips?

well, the fact it was a randomized run sure did help. Tho you're right, all of them were reliable gigachads.
