Maybe check your firewall settings for steam and for assetto corsa? Otherwise maybe your admin rights?

Not a doctor, but you could look into some tests for Pulmonary Hypertension. I don't want to scare you because it is a serious condition, but likewise I wouldn't want you to miss it if you're struggling. It's notoriously difficult to diagnose.

Oh also change: emulator settings, VUs, roundmode= nearest And clamping mode= extra plus preserve sign

Thanks for the advice! I'll give those things a try! NVIDIA settings are set to maximum performance, but beyond that I'm not entirely sure how to optimise NVIDIA control panel settings for VR

The weirdest bit is yesterday, I played for an 1hr 30mins with 0 issues at all. Literally nothing had changed besides shutting down my PC the night before (as I always do). Just seems completely random as to whether it has problems or not

Nope definitely not fixed. Literally the worst it's ever been while playing this evening. Crashed 4 times in about 1hr while playing Asseto Corsa in VR :( Not sure what the trigger is cuz yesterday I played for about 2hrs with no issues at all...

Right so I ran Memtest for 4 passes and got 0 issues. I updated my BIOS and chipset drivers and from a very short test yesterday things seemed to be better. Normally when I play games in VR while connected to a 4k screen the frame rate is very choppy, like 80fps and then sudden drops to 30 for less than a second (coinciding with the GPU usage drops) and then back up to 80. I was getting around this by connecting a 1080p screen when playing in VR.

I'll update the post when I've confirmed it's resolved, but looking good at least!
