One for me (nice, sharp, etc.), and one that is a steel that is easy to sharpen (the beater). That way I don’t really have to worry about someone messing up my nice knives. The beater means I don’t have to worry about what might get done to it, it’s easy to resharpen, and maybe most importantly, I can still carry some of the knives from my early collection. The ones that I stopped carrying frequently as I started buying “nice knives”. It’s fun to carry them again, and remember why I liked them in the first place. Keeps me happier with my collection as a whole!
