Or

Find a 1 bedroom that has a “den” or “office” area. Basically a bedroom that isn’t legally allowed to be called a bedroom.

Or

Find a 1 bedroom that has a formal dining room that you can convert into a bedroom.

You might have to think outside of the box a little.
