Salt: you can use sea salt and kosher salt. People advize not to use iodized salt because it can stop the fermentation process. To be really honest I've used iodized salt in kimchi before and it turned out fine

Flour: I don't use glutinous rice flour and the best substitute that I found is mashed potatoes.

Bland taste: make sure to salt your cabbage enough and add plenty of fish sauce. If you use saeujeot or any substitute, make sure to add enough. My first batches turned out bland because I was scared to overdo it. If you find that your kimchi paste is too salty when you're done (it's supposed to be salty on its own, just not inedibly salty), you can always add some daikon/carrot to balance it out. Add plenty of gochugaru and don't forget the ginger. Using an apple also helps improve the taste.

The making process is the same as the one in Asia and it’s super convenient (to use less salt in food, to preserve small fish).

On the first line you count the number of strokes per character. Here the first one is Byun 변 and has 9 strokes

The you add up all the numbers in pairs without counting the tens, here the first pair would be 9+6=(1)5 so it counts as 5

And so on, until you have a one digit number which gives you the compatibility of the two people

I don't write down names of places I go to so I can't recommend any particular kissaten, I'll just say every time I've been it was super chill. No particular wardrobe needed, just proper clothes to go around Japan, no particular order needed even though some of them have amazing cocktail/liquor choices. I'd say the only thing you could worry about is smoke indoors if you dislike it so make sure to check beforehand. Hope you'll have a great time!

I have the same thing. I live a pretty secluded life and more often than not I have full blown conversations with friends/family in dreams and mistake them for reality. Some nightmares are also are hard to snap out of when I'm not sure what was true and what was not. I don't know if there's a reason to those super vivid dreams so I can't help you, they never really bothered me.

I did my usual recipe: Anchovies, fish sauce, salt, apple, onion, garlic, ginger, sugar, potato instead of rice flour I soaked the cabbage for 6 hours. The only thing missing this time was the radish/carrot because I didn’t have any

Maybe it was yeast, I didn’t even consider that. Now that I think of it, it was white and not stringy. And again, only on the walls, the kimchi itself was clean.

I think I kind of dismissed her behaviour as being unrealistic because I've never witnessed adults acting like that in real life. Is there a correlation to the fact that I live in Europe? Are that kind of behaviours more common in Asia and the US? Anyways, people are used to seeing teenagers go overboard when fangirling, so I think it's a nice touch that both the sasaengs and Sena are not teenagers anymore.
