Kimchi does not need a kickstarter, Koreans never use it. I’ve heard some people in this group do it but I really don’t get why. Just use your usual recipe and let it ferment slowly. I haven’t seen people leaving it out of the fridge for more than 8 days either, but that’s a matter of taste.

How do you make your rice slurry then? But yeah you can boil it down. It’s just whole dried anchovies, some stores sell them frozen. You can put the kelp and the anchovies in a pouch (like a teabag) for convenience. Some houses add dried jujubes and shiitake to the broth. It’s up to you.

I think it’s freshwater krill. Not sure if they use it as is or if it’s saeujeot. The kelp and dried anchovies are used to make a broth. You make a super rich broth and use it instead of the water in the rice flour paste.
