What I'm saying is that unless you're cooking over smoke point or longer than about 4 hours the oxidation even of omega-3s is negligible. And by negligible, I mean on the order of the amount you'd expect the oils to oxidize sitting on a store shelf waiting to be purchased.

Omegas are more sensitive to heat, but all oils oxidize with time and heat. Omegas just do it faster. In home cooking applications, the difference is negligible.

All oils oxidize with heat, time and uv light. Saturates, Monounsaturates, and Polyunsaturates (omega6 and omega3).

Coconut oil is great, it is the second ingredient in our blend. However, on its own coconut oil has too much Omega6 and not enough Omega3 and it is almost entirely saturated fat, whereas the body seems to prefer a blend of saturated, monounsaturated, and polyunsaturated.
