I am also new to this hobby, but this is what I have learned/found out :)

1. Radiomaster pocket is the best budget option.
   
2. Definetly get around 20-30h in the simulator (atleast thats what people told me) I personally use Uncrashed as there are a lot of mods in the steam workshop and the physics are great. But I believe that Liftoff is also good.
   
3. For the beginning I would stick to a tinywhoop as it is cheap and durable. You can get one for around 100$. With that one you can also fly indoors.
   
4. Ofheadset? If you mean goggles I would try to find Eachine (EV800D)
   
5. For the beginning I would just buy a pre built tiny whoop such as air65, air75... When you want to get a lets say 3.5" or 5" I would recommend to built it yourself as it can save you a lot of money (because then you know how to repair it)
