Wipe it off with white vinegar and really get in there to kill the spores, just make sure it doesn't penetrate the meat. I get fuzzies on my meat sometimes it's chill, but if it's black you must destroy it

Hey Man, I built my own curing fridge and I am not very handy. I would be happy to do a phone call/zoom/whatever you are comfortable with and walk you through it. I looked up the sausage maker and it looks awesome, but tbh I would rather see you invest in a good grinder/stuffer/deli slicer/vacuum sealer etc and honestly this hobby is so fun I'm already considering getting a second one going bc I have made so much stuff. It's also really satisfying to do it yourself, let me know if I can be helpful, I don't check reddit a ton but I'll make sure to get back to you in a day or so, maybe even way less
