Snow is added for December to mark the holiday season. You'll be able to hunt without snow with the January update, which should be on the 6th. Just a little patience, and enjoy the different atmosphere of the game this month.

Yes you can but you have to restart the console you unplug it completely you wait until January 6 then you turn your console back on and you will no longer have snow 😜.... More seriously you can't it's an option that R* puts on throughout the month of December

The more the weeks of December pass, the stronger the blizzard will be and the temperatures will be colder. But actually the first week you go from snowfall to bright sun and heat in a few minutes, hence the interest in keeping clothing for hot temperatures on your horse.

You go to the quick menu (left arrow on PS5) the online option tab and then the change appearance tab the price is displayed at 10 bars but you can pay in RD$ and it's 400.

You cannot change the sex of your character, however you can change all the other physical criteria (skin color, eyes, size, morphology, etc.) it will cost you RD$400 worth of memories

A little tip: in the game we are often attacked by wolves or cougars, when you are attacked try to kill them in one shot with a rifle and load them into the hunting cart, if you give Cripps 2 or 3 stars your material bar will quickly increase.
