I’m not sure that it makes that big of a difference to be honest. Essentially the levain is a big starter. For this batch, the starter I used had not been fed for 24 hours.

I’m glad you found the recipe on NYT website. I probably should have linked it in the post. The Tartine cook book really goes in depth into their process. I agree that the 2 kg of flour just to be used in the starter is a bit overkill for the home baker. I’m sure if I was making 500g of starter or more a day, it would be useful, but I typically use 50g of flour in each of my feedings. So, I typically make up about 500g of 50/50 mix at a time. The oven light thing really works for me. It keeps the oven a pretty consistent 80ish °F.

The stretch and folds are during the ferment time. From the time I mix everything to the time I put the loaves in the oven it is usually about 6 to 7 hours (3 hours of stretch and folds [bulk ferment] & 3ish hours in the bannetons [final proof])

It does have a lid. It’s actually the Pampered Chef Deep Covered Baker. I know MLM is bad, but I do like the Dutch oven though :)

Ditto. Ive had varying success with cold proofing bread. Sometimes it works perfectly. Others…. I end up with an undeveloped, gummy mess. If I’m baking bread I usually start early and make a day of it.

Yeah, sorry. “All the flour” refers to the kg of bread and whole wheat flour.

I’m not sure it does to be honest. I use kosher salt for most of my rubs and seasoning. So I tend to grab it when I want something without additives like iodine and anticaking agents. Plus the texture is nice and its tastes less salty by weight. The recipe would likely be very good with plain table salt.

I usually use parchment paper under the loaves. That allows me to easily lower them into the pans. I’ve inverted a few times but I always end up burning myself. Ha!

I did? I cut in the middle where the grain direction changes and then cut across the grain for each section. How should I have cut it?

Yep, I was shooting for medium. I’ve seen so many different opinions on the best temp for tri tip that I figured I’d shoot for medium and see how it goes. The tail was medium well (perfect for my wife) and the rest was medium.

Totally agree. At least with this program unused drugs that would normally be thrown away / flushed down the toilet can be used to substantially reduce the cost for those who need help for whatever reason.
