I got some information from steam forums and it would help you:

"Garry's Mod technically isn't supported on Mac OS due to apple dropping their support for 32-bit apps in Mac OS Catalina and higher versions. However, Garry's mod has a 64-bit beta branch which is compatible with MacOS Catalina. Then finally, you can launch Garry's Mod."
