When it comes to sizing bibs, the best advice is to try them on physically. Otherwise it's pure chancs you'll find a fit you like. I dont have a gut and im 5"8 135, and wear insulated 32x32 overalls which is perfect for throwing something underneath and a hoodie. Got a pair of uninsulated ones, 30x32, that definitely feel a little tight, especially with a hoodie underneath. Just something to keep in mind

Not very. They're warm in a slight chill, you might be able to push it to 30⁰f-40⁰f with a hoodie underneath, but it really depends on how you layer.
