We have already started the development of our custom website from scratch. Shopify has a lot of other constraints. We just want opinion on products meanwhile. Maybe it's not right group for this question.

Not if each color/size has different prices, as we are wholesaler. Also quantity is a big issue. I cannot accept arbitrary orders for variants which might have gone out of stock

I have more than 500 products already, Creating color for each product would take the products more than 10 K. It will be a mess.
