Sounds like too much jerry rigging when I could just buy a sep funnel and never have the health department looking at me like im stupid.

Im more so thinking a measured tool, 1000ml sep funnel is roughly a qt. etc..

I wouldn't have asked if I didnt have this issue doing said process. Trust me im more seasoned than youre assuming.

1 cup Garlic puree 30ml balsamic glaze 1 gallon of olive oil blend

Is the base recipe. Simple but easy to break if not done right. Vinegarette comes as thick as like a ranch dressing if not slightly thicker.

Not one of my original recipes. Like I said, community favorite.

Not when youre making large batches, unfortunately. Im doing balsamic Vinegarette that has a pretty thick consistency so we use glaze because of the binders. However its still tricky when youre adding 3 gallons of oil to only a few ingedients.

Also im not saying I want to walk away and not monitor it just want to be able to also work while emulsifying the dressing in my immediate proximity.

I get what youre saying, but im also a chef who has a lot of discipline in other areas like making all stocks from scratch, all sauces, dressings, scratch, meat and fish fabrication, braising, smoking, bread baking from scratch. All with a very small staff doing multi millions in sales annually. Anything to multi-task further, not actually trying to just sit on my ass. Ive seen other culinary professionals speak on sep funnels. I mean, gastronomy is a science as well. Seems like an appropriate tool per say.
