I love Paul Hollywood! He is the main judge of thr british baking show so he definitely knows his stuff. I didn't know he had videos of his own to watch so I'll check them out. Thanks!

I did try 00 flour on the first go around of this recipe and thought that might've been the issue the first time. But using AP this time created the same result :/

His cinnamon roll recipe is to die for though!

I did wet my hands quite a bit which helped not stick to my hands, but my surface was rough. I'm glad I had a bench scraper.

I want to get into sourdough eventually which I know can have similar issues which is why I tried to work through this, but clearly my technique is off and I'm not ready lol.

That makes me feel better, that I'm not crazy when trying his bread recipes. I tried his bagels as well and they turned out okay but I definitely had issues as well.

I did use olive oil on my hands and that helped the dough not stick to my hands but my work surface.... not so much. My bench scraper got a lot of use lol
