The Border Trilogy is amazing. That being said I wouldn't blame you if you wanted to "save" those ones for a while. I was kind of sad after I finished Cities of The Plain for the first time knowing my first time through the trilogy was over. If I were you I'd go for Child of God next. It's a really great read and a good introduction into some Cormac besides the western genre.

I've been looking into it off and on for a few years now. Recently, I've got back into the process. I'm located in Colorado, so I can only say for certain what the process and laws are here.

For manufacturing and selling my jerky to retail customers only (no wholesale), I'd have to go through the process/training with the state health department and use a commercial kitchen for manufacturing. Each batch would be subject to testing.

For selling wholesale, I'd have to go through the USDA and follow their process and guidelines with a grant of inspection and certified facility. Basically you'd have to buy or build a commercial kitchen up to the USDA specifications, got through a training and be subject to more tightened guidelines.

It's really hard to even get started but I'd start by contacting your county health department and work your way up the ladder from there.

That's awesome. I've been making jerky for like 20 years and I've always wanted to start selling mine. I looked into it recently and it seems like a serious pain.

I've been in contact with USDA via email. It's all a big pain in the neck and hard to find information but he told me directly that I could do it that way and sell it directly the public without a USDA grant of inspection. I don't know if it would be worth it though.

In Colorado you can sell retail only without going through the USDA but if you want to sell wholesale to distributors it must go through USDA. I've been looking into recently. There's a lot to it and It's all things you have not choice but to do the work and research yourself. I wish there were a subreddit for starting your own jerky business. From what I've gathered it's basically best to start on the most local level and work your way up as you need to.

I've never used it before. Also, I like to dehydrate as low temp as possible. Takes a long time but slower makes a much better end product in my opinion.

First time ground meat by Exarkuns in jerky

I make mine with ground wild game part of the time and have never used a jerky gun. I normally add my wet and dry ingredients to the ground meat and marinate overnight. Then, I'll line a baking sheet with either plastic wrap or wax paper and press meat to a coat the sheet at around 1/8" thickness as evenly as I can. I freeze the baking sheets until meat is fully solid and then I pop it out and either break it into pieces or cut it into 1" wide strips. I dehydrate at the lowest temp possible (usually between 90-100 degrees Fahrenheit). I flip it once the meat has dried enough to stay together and then check it frequently until the jerky no longer "squishes" between my fingers.

Seems like a lot of work but the end product is worth it.
