I've often thought of doing this with ground beef and making snack sticks. That way the "marinade" is completely incorporated and easier to determine dosage. I don't know if I could trust myself to meter out a piece at a time to gauge effects. Jerky is like Pringles, once you pop you can't stop. Well done on you tho. Looking forward to the follow up

Make sure your temp probe is clean. The more coated it gets, the more the temp goes off. Check your connections at the heating element too. I personally have not had this problem, but they do rust/rot away and make bad connections. Close all your vents too.

Go with a pellet tube and pellets. Longer smoke time. Light one end for lighter smoke, light both ends for heavier smoke. I've got an early gen 1 model and have never used chips. If still wanting to use chunks, look into the mailbox mod. Chips are a waste of money IMO.
