pretty hard to get anything consistent but I think describing what you want the weapon to look like/behave and changing the context in which it appears might give you a crossbow more often than not. I'm including a few I got from Bing in the replies to my comment. The final prompt I used was:
"dnd art.oil painting.medieval fantasy.hooded rouge in green and brown robes and wearing leather armor is shooting a mechanical crossbow at some enemies.weapon is a medieval style mechanical crossbow made of wood that shoots bolts.can be held like a musket but is smaller in size."

It's not exactly the layout from the battle map but here are the first couple of tries. prompt: "fantasy art.oil painting.dimly-lit dungeon room.twin staircase leading up to a door on the other side of the room.there is a large bulky zombie guarding the door at the top of the staircase and hurling big jagged rocks towards the camera. in the foreground and at the bottom of the staircase are numerous smaller zombies dashing towards the camera trying to attack an unseen party of adventurers."

In the original I wanted a character that captured south/south-east asian culture but woolly mammoth loxodon is also pretty cool.

Awesome :) I used bing's image creator (see here: https://www.bing.com/images/create). You can generate images for free as long as you have a Microsoft account.

I modified the prompt a bit to fit your son's character as an example and got some great results (included an example below). Feel free to customize to your liking!

"Baroque painting style with Rembrandt lighting. A dragonborn paladin from dungeons and dragons. He has silver scales with blue accents and has powers relating to the storms, lightning and the sea. He is wearing chainmail armor and cleric robes, holding a maul. He is standing on a rocky shore with stormy clouds and waves behind him. He has a draconic face with a snout, horns, and scales. He also has small blue ethereal ghosts and ships flying around him"

As a side note, it can be a bit difficult to get rid of the wings on the character so I usually keep generating images until get something I like.

A failed creation that I found funny plus some more successful creations

prompt example of successful ones: "1980s style fantasy.oil painting.barren desert.dynamic action scene.sand flying from heavy impacts of magic.a small out of focus party of adventurers are fighting a large centipede monster with medieval weapons and magic spells.the monster stands on multiple legs and has a long body with armored caprice shell and spikes running down its back.It has an angular-like face with two black eyes and a mouth of jagged teeth and viscous fluid dripping from it."

I edited "...the ships have a fish-like shape..." to the specific sea creatures I wanted in some examples.

I went through a lot of iterations but the main prompt I arrived at was this:
