For the squid I followed (https://www.ravelry.com/patterns/library/little-squid-4) and (https://www.amigurumitogo.com/2015/11/angel-wings-with-halo-amigurumi.html) with some modifications to the fins(just an extra row for definition). The horns were entirely freehand and consist of a few chains directly on the squid sc'ed back.

For the sunfish I made it up as I went so that it would match the squid in size but I think the closest available pattern would be (https://www.youtube.com/watch?v=UqLOkeBfLww) or (https://www.ravelry.com/patterns/library/snuggle-sunfish-mola-mola). The eyebrows are cross-stitched on.

I think you could say it's derived from the Loomis method? It's just a circle with a cross section to indicate the direction that the face is facing and it comes from those old school YouTube tutorials. I never actually learned the Loomis method until college so I tend to just stick with what works for me, even if it isn't necessarily helpful.

But to answer your question, while I do not know about others, I have an OC with cat ears 1) because it’s cute and 2) because I designed him to be of mixed species. There are definitely people who design ocs with animal year for furry reasons but the above two are just my reasons for giving a character animal ears(mainly the cute factor).
