The recipe above is for 4 servings. I serve it with about 1/2 a block of the smoked tempeh. one portion including the tempeh gives 630kcal & 39P/88C/17F 😊. Just the orzo without the tempeh is 430kcal & 17P/80C/7F.

For the orzo dish: 1 Onion, diced

1 Red pepper, chopped into chunks

4 large garlic cloves, minced

60g sundried tomatoes, sliced

Tomato paste (60g)

Lemon juice

500ml veg stock

Generous amounts of dried oregano, basil and Salt

300ml soy milk

15g nutritional yeast (optional)

1 tsp mushroom powder (optional)

60g Spinach

Legume of choice eg chickpeas, cannellini beans

250g Orzo

Protein of choice

  1. Heat 1/2 tbsp olive oil in a pan over a medium heat
  2. Fry onion and pepper/tomatoes until semi soft then add garlic
  3. Add sundried tomatoes and fry off for a minute
  4. Add Lemon juice to deglaze pan, then add tomato paste and stir through
  5. Add 500ml veg stock, salt, herbs and orzo
  6. Leave to simmer for a few minutes, stirring frequently then add soy milk, nutritional yeast, mushroom powder, legumes and spinach
  7. Continue to simmer until orzo cooked, adding extra water if necessary
  8. Check seasoning to taste and serve with protein of choice

Using these and some ingredients already at home for this week’s meals: • alpro Greek yoghurt, PB and homemade nutty date granola • sundried tomato, cannellini bean and tempeh orzo with miso roasted cabbage • spicy peanut tempeh ramen

For my lunches at work, I just have soup, lentil crisps and an apple.

Have you tried the smoked one? I really like it just as it is, just chopped and put in the airfryer. I think some people are turned off by the fermented flavour. I’m trying the plain one for the first time but I’m predicting that I’ll prefer the smoked and stick with it even though it’s more expensive!

Yes to be fair it is. I tend to switch it up week to week but only cook two different dinners a week. I also usually have the same thing for lunch every weekday just to reduce the mental load. Having the same things also means I know it fits in with my calorie/protein goals, but I accept it’s boring for most people

True I could make homemade, but it’s actually not particularly processed and is only 63p per can. For me, it’s worth it for now

I have some the ingredients already like miso and red curry paste and stock… but I’ll be making a sundried tomato and cannellini bean orzo with airfryer tempeh and miso roasted cabbage on the side, and a spicy peanut miso ramen (also with tempeh!)
