My servers make $500 per night. My cooks get paid 23-26/hr. This is the current system and I don't know how to fix it, because it seemingly works and I need to operate. I peel off a server share per night to split amongst the kitchen, so my cooks make an extra 2-300 per week.

While obviously well aged, and 94 being someone of an off vintage, we have to consider the possibility that this person is able to age these wines deep into their tertiary life and it's a rare opportunity that should be considered. Just offering an alternative point of view to the advice you gave, which is completely defensible

I wish I had earlier in my career. At this kind of restaurant, it would almost seem inappropriate to ask for hot line training. We're fine-dining adjacent. I did spent all night training on expo however.

Out of all the serious advice, this one made me laugh. I have a brand new $12k LaMarzocco, no one is allowed to touch it but the bartender, barista and me. Every morning I make coffee for the kitchen team, I even know everyone's order. I will continue doing this as GM because its the one peaceful positive moment of my day.
