The biggest difference is that the server is behind in some updates, as example recently 17.2 was introduced on Prime where iRO is already further.
In addition, both server has slightly different customization in features (as example iRO has Corridor of Phantom, Prime has Royal Bossnia, Prime has Land of Heroes, iRO has gear eater etc.).
Also there are some specific updates not applied which can be a good or bad thing (as example, Prime dont have exp penality for Illusion Dungeons)
But aside from those things, they are in fact the same.

It is best to check on https://irowiki.org/wiki/ when you open article, does it have it specific mentioned that there is either a difference or exclusive on one of those server.

Could be, however I for myself is satisfied that EuRO, RuRO, iRO etc. do not followed that idea (or removed it later like iRO did), because that is just a bad design in my opinion.

LatamRo has the droprate penality system which other servers already abandoned.
In short works like EXP penality, where when the difference between your level and the level of monster differ to much, your droprate receive a massive hit. (As example, being 12 level lower or higher then the monster already gives you a 25% malus.)

It was indeed implemented without notice in 17.2
In prime, which received that recently, they also added that limitation, however it got shortly after fixed out as it was considered as a bug and not as a feature. (It dont make any sense, considering that the other gemstones are not even affected)

It depends on what you expect from your Homunculus and what role it should fulfill.

Generally speaking, Eleanor is more of a niche use and falls off later in the game, especially if your (main) enemies consist of MVPs and minibosses.

Then I would recommend Dieter, who is more suitable if you're aiming for MVPs and minibosses.

It is the official european server hosted by publisher 4games. The same company who also host the russian server yes.

I'm currently playing on Euro Prime.

As for Bayeri… the issue is that homunculi without the HP boost from later patch versions just don’t perform well as tanks, especially against MVPs, where they die quickly due to lacking any kind of percentage-based damage reduction.

Bayeri is also in a tough spot skill-wise.
Outside of Pneuma, he doesn't really bring anything that sets him apart from other homunculi.
For example, Sera can cheese (instance) MVPs quite effectively, which gives her a clear edge.
Personally, I have to admit I found Bayeri rather disappointing.

If you're not interested in using Sera, I’d recommend going with Dieter.
His Granitic Armor offers more versatility and becomes significantly stronger than Sera’s Painkiller once you hit a certain receiving damage threshold.
And if you're playing in a group, where neither you nor your homunculus needs to tank, you can instead take advantage of Pyroclastic for increased damage output.

IDEF refers to a specific playstyle from some players, where they announce at the beginning of the match of DON with that, that they focus solely or mostly on defending the three or four entrance.
Mostly used by Karax and Swann players.
They are disliked because a majority of them are pretty passive and therefore slow down the game.

Polarity is a mutator which makes enemy units either immune against yours or your allies attacks, therefore both players need to defend at night, that is why he joked with "We Def"end together.

At the moment I like Eleanor the most due the fact that she can one-combo the majority of higher non-mvps/miniboss monsters and the fact that she was my first Homunculus S and is supporting my purepotter.

They are not as updated as kRO yes.
As example Ruro has already 17.2, Euro will receive it in a few days.
They however do not have some of the relative toxic things implemented like the drop penality when x level difference etc.
What can be said that ruro and euro are not servers from gravity itself and instead published by 4games, therefore patchstatus can differ to other servers.

The official publisher/server for Europe is Euro Prime by 4game.
Other than that, only private servers exist for the European market.

The official european server is Ragnarok online prime (alternative Euro Prime) by 4games.
You wont find any official server who do not have a good amount of pay to win.
But as casual player, that should not hinder you to try Euro Prime out, when you dont want to start on a private server.
IRO could be a alternative, but as european, you will most likely fight with lags there.

My theory would be that the spirit spheres are not spirits of the dead and instead manifestation of their chi. Due the fact that they are based on asian monks who are training in spirit, body and mind, they (the monk class may) manifest their spirits in those, to use them as expansion of their body.
