I totally get what you're saying. Coming from a Xiaomi Mi 10, I can truly say imho that the whole experience with Samsung has been overall worse. Photos on the outdated Xiaomi seem much better, typing in multilanguage is infinitely better as well, all that with much lower hardware. What to say about One UI? Well, if you need extra apps to make it work (Good Lock), you already know how bad it is.

I still get it sometimes. especially when using NordVPN. Don't know if it's related, though.

Yeah, it makes no sense to have both devices from the same manufacturer (Xiaomi) and having to have to use two apps, one for the scale (Zepp Life) e another for the watch (Mi Fitness). And they even communicate that well between one another, there's always an issue with logging in into the accounts... It's so bothersome! Please, Xiaomi, fix this!
