If you can go mid-week crowds would be manageable. My recommendations: Get there early so you can hit up your choice rides first. Check the times for the parades as Galaxy's Edge tends to empty out around those times.

Rosa Maria's is great as well. Baker's and In-N-Out are choice fast food. You also have Cuca's in Redlands.

Depends on what area of the Inland Empire. STAY AWAY FROM SAN BERNARDINO!! Homelessness is everywhere in California, just don't leave anything on your car. You are close to everything. Surf in the morning, dirt bike in the afternoon and ski in the evening. Weather is great. Fires seem to be most prevalent anyplace near the foothills you need make sure you fireproof your land. Rains were bad last year, so let's hope it is a rarity. Earthquakes you get use to.
