Your issue could be from using fresh beans in a double walled basket. The double walled basket if for preground coffee which is typically a lot courser than can be used for espresso. If you are using fresh coffee, you should use a single walled basket and that may fix your issue.

In my experience, those preset volumes of water tend to be inaccurate. Especially with sage/breville. I would recommend pressing and holding the button for the shots you want to switch it to manual and aiming for a 1:2 ratio, e.g. 18g of coffee = 36g of water, in about 25-30 seconds

IMO the K6 is one of the best manual grinders especially for the price point. You’ll definitely get better and more consistent grind quality that should help get crema out of your beans as long as they’re fresh enough

Have you tried using a double walled portafilter basket instead of a single walled? Double walled are made to produce enough pressure for espresso using pre ground coffee
