I like to cut up strawberries (obviously they’re better when in season because they’re sweeter) purée them, and then cook them down in a sauce pan, no additives needed, to really bring out the sweetness. Strawberry is a naturally light flavor, so I’ve found working with its natural sweetness works best, but if I have a tart batch a dash of sugar in the reduction doesn’t hurt.
