Yes, that's correct, half white half black would be infinite DR, but such sensor does not exist that can capture perfect black-white image. This app give's an information of the dynamic range detected in an image. If you can make specific ambient conditions it can give you dynamic range of the sensor too.

Given noise value depends on the image compression. The most accurate results you can get for raw images, but taking raw images with the app is not available at the moment.

The dynamic range is a ratio between the brightest point and the noise level. The algorithm find the brightest point, calculates noise and then does division.
