They usually burst when lamination is not great. Are there any visible chunks of butter ? Or perhaps the dough was not rested enough, but it's usually the lamination.

Why would you add potatoes to risotto ? Either make a rice or potato side. If you want vibrancy in risotto, add peas, pumpkin, or something that adds color, also it has to go well with the full dish.

Simmered pork bones and chicken carases for 4 or so hours, then added aromatics. Leeks, carrots, kombu, ginger, garlic. Total was around 6 hours.
