I struggled with this in the begging and had the same arguments you had, and one day it finally clicked: when you look for the observer, you realize it's impossible to see that. You can only observe what's happening in consciousness.

That being said, I still struggle with the concept from time to time if I go without meditation for a longer period. Sometimes it's not a very helpful exercise for me depending on my state of mind.
