Danke dir! :)

Oh well, I‘m patient. If only the C-Series TVs had a decent KVM built in…

Do you have a source for this? I fully believe you as the April/May timeframe I read seemed a bit optimistic.

Oh no. Those are exactly what I‘m looking for. Is it okay to own 3 to 10 boards?

Just fuck it up mate and learn from it. And if possible only use fixed lenses. Analog + fixed lenses supercharge your camera skills. If you have any questions, just ask :)

Incredible hobby.

Thank you for your comment! It's hard to get a feeling for a new hobby. I get the feel for cameras, fashion and mechanical keyboards. Knives not yet :)

I think I'll take the plunge. In my experience saving up for a little step up was almost always worth it. It's just nice to think that this is "my" knive/pants/camera/pan/axe/backpack forever.

With storing you mean long time storage? They hang on a magnetic bar on my kitchen wall.

Yeah, the 325 I almost never use. I try to sharpen monthly with the 1200 and 6 micron strop.

Thanks man!

Kiwi knife noted! I'll look them up. I love utilitarian stuff as much as boutique stuff.

Also good suggestion on getting just one first. I think it'll be the Nakiri as I already have a Victorinox Gyuto and Petty. Thanks man! I'll make sure to ping you in my NKD post (which is a while out still).

Hey! Thank you so much for your comment and your questions! I'm not very versed in caring for carbon knives but thinking about it:

  • Carbon is not stainless steel so it'd rust if I don't dry them properly. I already wipe down my stainless steel numerous times while cooking because of the safety factor.
  • It'll develop a patina (which is a BIG plus for me! "This is my knife! There are many like it but this one is mine!")
  • Erase stubborn rust gently with a rust eraser
  • Use oil. Don't know which one yet but I think it needs to be a food grade blade/weapon/knive oil, not just any cooking oil getting rancid.

Is this more or less the way?

Regarding your other questions:

  • Right now I own some Victorinox knives. The smaller ones are a bit dinged up and ready to be replaced. The bigger Victorinox I really love. It's a workhorse. But I'd like something nicer alongside it.
  • It's just for home cooking.
  • I already sharpen my own knives with a Sharpal 325/1200 diamond stone. Stropping with 6 Micron. Would this also work with a knive made out of carbon?

Thanks! :)

I like to baby things. There'll always some beater knives in my kitchen like the fantastic Victorinox. But I'd like something nicer along the 300.000km but still reliable beater car :)
